Springy-Summer Roll dip and tofu marinade!

Fish Sauce Dip

  • 4 teaspoons fish sauce
  • 1/4 cup water
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1 tablespoons white sugar
  • 1/2 teaspoon garlic chili sauce
Spicy Tofu Marinade
  • 1 block of extra firm tofu, cut into long strips
  • 1/8 cup liquid honey
  • 2 Tbsp. fish sauce
  • 1 Tbsp. fresh lime juice
  • 1-2 Tbsp. chili sauce

Sara's Parisian Night: The Aftermath!

Hey kids! Just putting this up in case anyone's motivated to share recipes, etc, from Sara's epicurean night! Here's mine for Tuna au Poivre:


1 lb good-quality fresh tuna
3 tbs mixed peppercorns
1 tsp cumin
1 tsp crushed garlic
1 tbs olive oil

For sauce:
1 cup red wine
1 tsp mustard
1 tbs chopped green peppercorns
2/3 cup heavy cream

1 tbs canola or grapeseed oil

Grind the peppercorns and cumin in a spice grinder or mortar and pestle. Mix with oil and garlic, and rub generously onto both sides of the tuna. Wrap in plastic and let marinate for two hours or so in the fridge.

For the sauce - boil the red wine in a saucepan until reduced to 1/3 and slightly thick. Add mustard, green peppercorns, and cream. Reduce again until thickened.

Heat the canola, grapeseed, or other high-smoking-point oil in a cast iron skillet (preferrably) over high heat until VERY VERY hot - the hotter, the better. Lay the tuna in the skillet and cook for 1-2 minutes, until the bottom has formed a crust. Then flip and repeat. A good portion of red or pink should still show on the sides.

Remove the tuna and cut into 1/2 inch thick slices. Pour some of the sauce onto a plate and arrange the slices on top. Enjoy!

Sara's Parisian Epicurean Night

Hey, kids! Just putting up an entry to get plans rolling for Sara's epicurean night! It's this coming Sunday, the 14th. Sara - what time should we come down, and can you send the address/directions for those who don't know?

Dan and I will be driving down and will be happy to carpool - we'll have to take my car since his isn't totally street-legal, which means we can fit two more comfortably. We'll be heading right through portsmouth - so maybe two of you p-town area kids might want to come with us?

Bera - can you also confirm that parking is open to non-residents on Sundays?

Since no one else has claimed it, I'm going to jump on it and bring a tasty Parisian appetizer!

Hey kids! So here's the schedule for the next round of Epicurean Club meetings:

You notice Caitlin's day falls on the fourth of July - do we want to maybe bounce that to the following Sunday, the 11th? I'm actually going to be out of town that weekend anyway in North Carolina, and I know a lot of people tend to have family plans and such that weekend.

Let me know what you all think! And Sara, let us know your theme so we can start figuring out what we want to make. Also, since Sara's night involves a drive to Somerville, do us northerners want to set up a carpooling arrangement? Parking is open on Sundays in Somerville but it would probably still be nice to save on gas and such. Dan and I will be more than happy to drive and can fit four comfortably or five at a squeeze in the Subie.
